For the 2016 vintage of Zapata Cabernet Sauvignon was sourced from the La Pirámide Vineyard (Luján de Cuyo),and Malbec from the Nicasia and Adrianna Vineyards (Uco Valley). Vineyard altitudes range from 3100 ft to close to 4800 ft.
10% whole cluster and 90% whole berry fruit was hand-loaded into 225-500 liter first and second use French oak foudres for a 100% barrel fermentation for a period of 15 days. The fermentation temperature was kept low, extracting intense aromas, with cap management done by hand. Wild yeasts were used. The wine was then aged in French oak barrels for 18 months.

Consistently among the best red blends in Argentina, Nicolás combines Cabernet Sauvignon with 31% Malbec, aged in 20% new wood in 2016.
